MCT Almond Butter Pitaya Bowl

This pitaya bowl is lower in sugar and high in nutrients, healthy fats, and proteins - great for after a workout. Whip it up in a few minutes for a lower sugar alternative to store-bought pitaya bowls! 

 

Ingredients:

1 Dragonfruit Smoothie Pack

1 c Coconut Milk

1 Scoop Collagen Peptides

1/2 Frozen Banana

1 c Raw Spinach, Packed

1/2 c Raspberries

1/2 c Blackberries

1/2 Ripe Banana, Sliced

1 c Granola

Unsweetened Coconut Flakes To Taste

1 tsp Chia Seeds

2 tbsp MCT Oil

1/2 c Almond Butter

 

Directions:

To make pitaya blend, add 1/2 frozen banana, 1 scoop of Collagen Peptides, 1 cup of spinach, 1 dragonfruit smoothie pack, and 1 cup of coconut milk to a blender and blend until smooth. 

Add mixture to a bowl and top with 1 cup of granola of your choice. We prefer a low sugar store bought granola or homemade granola. Top with 1/2 cup of raspberries, 1/2 cup of blackberries, and 1/2 of a sliced banana.

Mix 2 tablespoons of MCT Oil with 1/2 cup of almond butter for drizzle.

Drizzle MCT Oil almond butter and top with chia seeds and unsweetened coconut flakes.
